Bacon..?

Question:

Well here’s the word from a lot of "old timers" here in Tennessee who have lived in these mountains all their lives. Salt! They would pack most all their meat in layer upon layer of salt. Also, many old timers who’ve I talked to used to smoked their meat in a smoke house using hickory or other hardwood. Hams and shoulders were done this way and they had a fairly long shelf life. Slaughtering was usually done in the fall, meat salted in wooden barrels (with lids) and smoking done. Hams and shoulders were just left hanging to be sliced as needed. Most of the meat they used was either wild or raised at the homeplace. My husband started hunting for the family when he was 7 years old. All the meat he brought home was either deer, wild hog, or bear. His father did salt a lot and smoked the meat as well. Salted meat tends to be on the salty side but if you’ve ever tasted a piece of "country ham" you’d have to agree that it can’t be beaten. Hope this helps. Bonnie Farner
